- In a large bowl, mix all ingredients together.
- Season to taste with salt, pepper and cilantro. I love cilantro so I usually use a lot.
- Cover and chill for an hour to let the flavors come together.
- Serve with veggies, or as a taco topping, or a nacho topping, or a chili topping, or on a sandwich, etc!
